Almond Banana Pancakes

paleohacks-banner15These paleo almond banana pancakes are delicious even though they are heavy in fruits and nuts and a great healthy substitute for regular pancakes.  Serve these with fresh berries or honey.

Ingredients (serves 2)

  • 4 ripe bananas, mash them
  • 4 tbsp almond butter
  • 2 eggs
  • Coconut oil, for cooking

Preparation

Combine the mashed bananas in a bowl with the eggs and mix well. Add the almond butter to the mashed bananas and combine well. Put a pan over medium heat and melt in some coconut oil. When hot, pour in the banana and almond butter mixture and cook until brown on each side. Repeat for all the batter, put the pancakes in a oven (200F) so they stay hot. Enjoy your paleo almond banana pancakes! Serve with fresh berries or honey. 🙂
