Cachumbar is a salad relish most commonly served with Indian curries. There are many varsions and this one will leave your mouth feeling cool and fresh after a spicy meal.
Ingredients (servec 4):
- 3 ripe tomatoes
- 3 chopped spring onions
- 3 tbsp chopped fresh coriander
Remove the thoudh cores from the bottom of the tomatoes wih a small sharp-pointed knife. Halve the tomatoes, remove the seeds and dice the flesh. Combine the tomatoes with the spring onions, salt, and chopped coriander. Serve at room temperature.
Tip: Cachumbar also makes a fine accompaniment to fresh crab, lobster and shellfish.
